As a part of our collection All Issues We’re Cooking, Jan Kincaid describes a fudge recipe she grew up making together with her dad and mom and continued making into her maturity.

All this season, we have been sharing tales from our listeners of their favourite household recipes. It is a collection we name All Issues We’re Cooking. As we speak we hear from Jan Kincaid, who brings us a dessert meant for sharing with buddies and neighbors.
JAN KINCAID: I used to be very glad to submit a recipe referred to as Pete Kincaid’s fudge. Pete Kincaid could be my father. Properly, we made it as a household. However my father began to make it in batch after batch and provides it to individuals as a present at Christmas time. He was the director of vocational schooling for our college system in East Chicago. So he was in control of residence economics, vocational arts – which might be print store, woodshop, machine store, issues that are not even provided in faculties now. My mom would do the procuring. So she would all the time get the evaporated milk. She would get chocolate chips. She would get the butter and the sugar.
Then we would arrange within the kitchen. We had a bit, tiny kitchen in East Chicago. And it was a giant pot. And we would comply with the recipe. After which I’d stand on a stool. And I used to be in control of stirring it for the 11 minutes – or my dad. And we would stand there and speak. With fudge, you possibly can’t double the recipe. You may solely make one batch at a time. And that is the place the persistence got here in with my father. He was an especially affected person man.
