Having a few quick, easy, and delicious recipes in your repertoire is the key to weeknight dinner success. Similar to our lemon garlic butter shrimp, but with an extra-springy vegetable addition, this garlic butter shrimp & asparagus is one of those recipes. The technique is simple—it only takes 20 minutes from start to finish—and it’s great for any level of cook. With a generous amount of butter and ample garlic in the recipe, you know it’s bound to please. Read on for our tips to get it perfect every time:
— When shopping for asparagus, try to buy two bunches of similar thickness. This way, when you’re cooking them, they’ll all get tender in the same amount of time.
— If the shrimp at your grocery store aren’t already peeled and deveined, you can ask the person behind the fish counter to do that step for you to save you time at home. We went with tail-on shrimp, but feel free to remove them before cooking if you prefer.
— Choose a skillet large enough to fit all the asparagus and shrimp because you’ll toss them together at the end.
— Because this dish comes together super-fast, make sure to prep all your ingredients you’ll need before you start to cook. You don’t want the garlic burning while you’re rummaging about for your shrimp!
This recipe is certainly hearty enough to stand on its own, but no one would complain if you gave them a piece of crusty bread to soak up all that butter with. It would also be lovely spooned over rice, or paired with steak à la surf & turf. You’re going to want to make this over and over again, so feel free to get creative and change it up.
